Can a switch hitter switch sides of the plate once he is thrown a pitch - if they go from a left handed pitcher to a right handed pitcher can the batter switch from a right handed to left handed?
They can only switch pitchers during an at bat if the original pitcher is injured while facing that batter. They can't just say "Oh the count is 3-0, this guy doesn't know where the plate is, let's get the lefty! He'll get this guy out."
And yes, if the new pitcher throws with a different arm, the hitter can hit from the other side of the plate.

Where did you read this incredibly ridiculous rule? A batter may switch sides at ANY time, until the pitcher is ready to pitch.
6.02 (b) The batter shall not leave his position in the batter's box after the pitcher comes to Set Position, or starts his windup.
6.06 A batter is out for illegal action when- (b) He steps from one batter's box to the other while the pitcher is in position ready to pitch;"
Yes, you are right: the batter can switch between pitches if he wants to. But if you read all of the original question, which specifically asked about a pitching change during an at bat, my "ridiculous" rule is correct. They cannot change pitchers during an at bat unless there is an injury.
